Elephant Fish (Callorhinchus milii) belongs to the Callorhinchidae family and is a firm, white-fleshed fish with a naturally low oil content.
While the fat content of dried Elephant Fish cartilage has not been individually tested, comparable testing of school shark cartilage shows a fat content of approximately 1.8%, which is considered similar.
